Ingredients
  

  • 6 Cups Seedless Watermelon, cubed and chilled
  • 1 Large English Cucumber, diced (peel stays on)
  • 1 Medium Red Bell Pepper, finely diced
  • 1/4 Cup Red Onion, minced
  • 1/2 Cup Fresh Cilantro or Mint, chopped finely
  • 3 Tablespoons Fresh Lime Juice, adjust to taste
  • 2 Tablespoons Extra Virgin Olive Oil, high quality
  • 1/2 Pepper Jalapeño, seeded and minced (optional)
  • Salt and Black Pepper, to taste
  • Optional Garnish: Feta Cheese

Method
 

  1. Prepare the Watermelon: Cut watermelon into cubes and set aside one cup for garnish.
  2. Blend the Base: Blend five cups of watermelon until smooth and pour into a mixing bowl.
  3. Chop the Vegetables: Dice cucumber, bell pepper, and onion, and add to the watermelon juice.
  4. Add the Aromatics: Stir in minced jalapeño and chopped herbs.
  5. Season the Soup: Add lime juice and olive oil, then season with salt and pepper.
  6. Chill Thoroughly: Cover and refrigerate for at least two hours.
  7. Garnish and Serve: Stir, ladle into bowls, and top with reserved watermelon cubes and feta cheese.

Notes

Use a very cold watermelon for best results. Hand dice vegetables for a satisfying crunch. Adjust seasoning before serving.
