Ingredients
  

  • 2 large pieces flatbread or naan bread
  • 3 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh basil leaves, tor
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic glaze
  • 1/4 cup red onion, thinly sliced
  • Sea salt, to taste
  • Black pepper, to taste

Method
 

  1. Step 1: Brush both pieces of flatbread lightly with olive oil. Optionally, toast in a preheated 400°F oven for about 5 minutes until lightly golden.
  2. Step 2: Cut watermelon into bite-sized cubes and pat dry with paper towels.
  3. Step 3: Arrange watermelon cubes evenly across the flatbread, leaving space between pieces.
  4. Step 4: Crumble feta cheese generously over the watermelon.
  5. Step 5: Scatter thinly sliced red onion over the top.
  6. Step 6: Sprinkle chopped mint and torn basil leaves over everything.
  7. Step 7: Drizzle balsamic glaze in a zigzag pattern across the pizza.
  8. Step 8: Finish with a drizzle of olive oil and season with sea salt and black pepper to taste.
  9. Step 9: Slice into squares or triangles and serve immediately.

Notes

Use cold watermelon for the best texture. Assemble just before serving to prevent sogginess.
