Ingredients
  

  • 6 cups fresh watermelon, seedless, cut into 1-inch cubes
  • 2 medium English cucumbers, sliced into half-moons or cubes
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, thinly sliced or tor
  • 1/4 cup red onion, very thinly sliced (optional)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • Sea salt, to taste
  • Black pepper, to taste

Method
 

  1. Prepare the Fruit: Cut the watermelon into uniform 1-inch cubes and place them in a large mixing bowl.
  2. Prep the Cucumbers: Slice the cucumbers into half-moons or cubes and add them to the bowl with the watermelon.
  3. Add the Onions: If using, slice the red onions into very thin slivers and add them to the bowl.
  4. Whisk the Dressing: In a small jar or bowl, combine olive oil and lime juice, whisking until emulsified.
  5. Dress the Salad: Pour the dressing over the watermelon and cucumber mixture and gently toss to coat.
  6. Add Herbs and Cheese: Sprinkle feta cheese and mint leaves over the top and gently toss again.
  7. Season: Add sea salt and black pepper to taste, giving the salad a final gentle toss.
  8. Serve: Serve immediately for the best texture and flavor.

Notes

Use cold ingredients for the best taste. Chill watermelon and cucumbers for at least 2 hours before assembly. Avoid over-mixing to keep the watermelon intact.
