- Prepare the Fruit: Cut the watermelon into uniform 1-inch cubes and place them in a large mixing bowl.
- Prep the Cucumbers: Slice the cucumbers into half-moons or cubes and add them to the bowl with the watermelon.
- Add the Onions: If using, slice the red onions into very thin slivers and add them to the bowl.
- Whisk the Dressing: In a small jar or bowl, combine olive oil and lime juice, whisking until emulsified.
- Dress the Salad: Pour the dressing over the watermelon and cucumber mixture and gently toss to coat.
- Add Herbs and Cheese: Sprinkle feta cheese and mint leaves over the top and gently toss again.
- Season: Add sea salt and black pepper to taste, giving the salad a final gentle toss.
- Serve: Serve immediately for the best texture and flavor.
Notes
Use cold ingredients for the best taste. Chill watermelon and cucumbers for at least 2 hours before assembly. Avoid over-mixing to keep the watermelon intact.
