Method
- Wash all vegetables and herbs thoroughly and pat dry.
- Slice cucumbers into half-moons and core tomatoes, cutting them into wedges.
- Slice red onion into thin slivers and soak in ice water if too sharp.
- Tear basil leaves and chop parsley and mint, then add to the bowl with cucumbers and tomatoes.
- Prepare dressing by whisking olive oil, vinegar, salt, and pepper in a separate bowl.
- Pour dressing over salad ingredients and toss gently.
- Let the salad sit for at least ten minutes before serving.
Notes
Use room temperature tomatoes for better flavor. Adjust seasoning to taste.
