Tomato Cucumber Herb Salad

Ingredients
  

  • 4 large ripe tomatoes or 2 cups cherry tomatoes
  • 2 medium English cucumbers
  • 1/2 small red onio
  • 1/2 cup fresh basil
  • 1/4 cup fresh parsley
  • 2 tablespoons fresh mint
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper

Method
 

  1. Wash all vegetables and herbs thoroughly and pat dry.
  2. Slice cucumbers into half-moons and core tomatoes, cutting them into wedges.
  3. Slice red onion into thin slivers and soak in ice water if too sharp.
  4. Tear basil leaves and chop parsley and mint, then add to the bowl with cucumbers and tomatoes.
  5. Prepare dressing by whisking olive oil, vinegar, salt, and pepper in a separate bowl.
  6. Pour dressing over salad ingredients and toss gently.
  7. Let the salad sit for at least ten minutes before serving.

Notes

Use room temperature tomatoes for better flavor. Adjust seasoning to taste.
