- Preheat your oven to 475°F (245°C) with a pizza stone or large baking sheet inside.
- Heat olive oil and butter in a skillet over medium-low heat. Add sliced onions and a pinch of salt. Cook for 20-25 minutes until golden brown.
- Increase heat to medium, add sliced mushrooms, and sauté for 5-7 minutes. Stir in minced garlic and thyme during the last minute.
- Prepare the dough on a floured surface, stretching it into a 12-inch circle. Transfer to parchment paper or a floured pizza peel.
- Brush the edges of the dough with olive oil. Spread a thin layer of olive oil over the dough, sprinkle half of the mozzarella, then add the onion and mushroom mixture, and top with remaining mozzarella and parmesan.
- Bake for 10-12 minutes until the crust is golden and cheese is bubbling. Let sit for 2 minutes before slicing.
Notes
Use room-temperature dough for easier stretching. Avoid overcrowding the skillet when sautéing mushrooms to ensure they brown properly.
