Ingredients
  

  • 1 lb (450g) Pizza Dough
  • 2 large Sweet Onions, thinly sliced
  • 8 oz Cremini Mushrooms, sliced evenly
  • 2 cups Mozzarella Cheese, shredded (low-moisture)
  • 1/4 cup Parmesan Cheese, freshly grated
  • 3 tbsp Olive Oil, extra virgin preferred
  • 1 tbsp Butter, for caramelizing onions
  • 1 tsp Fresh Thyme, chopped finely
  • 2 cloves Garlic, minced
  • Salt and Pepper, to taste

Method
 

  1. Preheat your oven to 475°F (245°C) with a pizza stone or large baking sheet inside.
  2. Heat olive oil and butter in a skillet over medium-low heat. Add sliced onions and a pinch of salt. Cook for 20-25 minutes until golden brown.
  3. Increase heat to medium, add sliced mushrooms, and sauté for 5-7 minutes. Stir in minced garlic and thyme during the last minute.
  4. Prepare the dough on a floured surface, stretching it into a 12-inch circle. Transfer to parchment paper or a floured pizza peel.
  5. Brush the edges of the dough with olive oil. Spread a thin layer of olive oil over the dough, sprinkle half of the mozzarella, then add the onion and mushroom mixture, and top with remaining mozzarella and parmesan.
  6. Bake for 10-12 minutes until the crust is golden and cheese is bubbling. Let sit for 2 minutes before slicing.

Notes

Use room-temperature dough for easier stretching. Avoid overcrowding the skillet when sautéing mushrooms to ensure they brown properly.
