Ingredients
  

  • 1 lb (450g) Pizza Dough
  • 1/2 lb Large Shrimp, peeled and deveined
  • 3 tbsp Unsalted Butter, melted
  • 2 tbsp Extra Virgin Olive Oil
  • 4-5 large Garlic Cloves, minced
  • 1.5 cups Mozzarella Cheese, shredded
  • 1/4 cup Parmesan Cheese, freshly grated
  • 1 lemon, Lemon Juice & Zest
  • 1/2 tsp Red Pepper Flakes
  • 2 tbsp Fresh Parsley, chopped for garnish
  • 1 tbsp Dry White Wine (optional)

Method
 

  1. Preheat the oven to its highest setting, usually between 475°F and 500°F (245°C-260°C). If using a pizza stone, place it inside while the oven heats up.
  2. Pat the shrimp dry with paper towels and toss with a teaspoon of olive oil and a pinch of salt.
  3. In a small saucepan over low heat, melt the butter with the olive oil. Stir in the minced garlic and red pepper flakes, cooking for 1-2 minutes until fragrant. Remove from heat and stir in the lemon juice and white wine.
  4. On a floured surface, stretch the pizza dough into a 12-inch circle and place it on parchment paper or a pizza peel dusted with cornmeal.
  5. Brush the garlic butter scampi sauce over the dough, leaving a small border for the crust. Save about one tablespoon of the sauce for later.
  6. Sprinkle the shredded mozzarella evenly over the sauce, followed by a light dusting of Parmesan cheese.
  7. Arrange the raw shrimp evenly across the cheese and drizzle the remaining garlic butter sauce over the shrimp.
  8. Transfer the pizza to the oven and bake for 8-12 minutes until the crust is golden brown and the cheese bubbles.
  9. Remove from the oven and sprinkle with fresh lemon zest and chopped parsley. Let it rest for 2-3 minutes before slicing.

Notes

Ensure shrimp are thoroughly dried to prevent a soggy crust. Use a high oven temperature for a crispy crust. Grate cheese yourself for better melting.
