- Preheat the oven to its highest setting, usually between 475°F and 500°F (245°C-260°C). If using a pizza stone, place it inside while the oven heats up.
- Pat the shrimp dry with paper towels and toss with a teaspoon of olive oil and a pinch of salt.
- In a small saucepan over low heat, melt the butter with the olive oil. Stir in the minced garlic and red pepper flakes, cooking for 1-2 minutes until fragrant. Remove from heat and stir in the lemon juice and white wine.
- On a floured surface, stretch the pizza dough into a 12-inch circle and place it on parchment paper or a pizza peel dusted with cornmeal.
- Brush the garlic butter scampi sauce over the dough, leaving a small border for the crust. Save about one tablespoon of the sauce for later.
- Sprinkle the shredded mozzarella evenly over the sauce, followed by a light dusting of Parmesan cheese.
- Arrange the raw shrimp evenly across the cheese and drizzle the remaining garlic butter sauce over the shrimp.
- Transfer the pizza to the oven and bake for 8-12 minutes until the crust is golden brown and the cheese bubbles.
- Remove from the oven and sprinkle with fresh lemon zest and chopped parsley. Let it rest for 2-3 minutes before slicing.
Notes
Ensure shrimp are thoroughly dried to prevent a soggy crust. Use a high oven temperature for a crispy crust. Grate cheese yourself for better melting.
