Ingredients
  

  • 6 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • 1/2 cup fresh mint leaves, tor
  • 1/4 cup red onion, thinly sliced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1 cup cucumber, diced (optional)

Method
 

  1. Cut watermelon into bite-sized cubes and place in a large serving bowl.
  2. Slice red onion thinly and soak in ice water for 10 minutes if too sharp, then drain.
  3. Tear mint leaves by hand and add to the watermelon along with the drained onion slices.
  4. If using cucumber, dice and add it now.
  5. Whisk together olive oil, lime juice, honey, salt, and black pepper in a small bowl.
  6. Drizzle dressing over salad ingredients and toss gently.
  7. Crumble feta cheese over the top and serve immediately or chill for 15 minutes.

Notes

Serve cold for best results. Store leftovers in an airtight container for up to 24 hours.
