Ingredients
  

  • 2 large pieces Flatbread (Naan or Pita)
  • 2 medium Fresh Peaches, sliced
  • 4 ounces Goat Cheese
  • 1/4 small Red Onion, sliced thinly
  • 2 tablespoons Honey
  • 1 tablespoon Balsamic Glaze
  • 1 cup Fresh Arugula
  • 1 tablespoon Olive Oil
  • Salt and Pepper to taste

Method
 

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Prepare a baking sheet lined with parchment paper.
  3. Place flatbreads on the baking sheet and brush with olive oil.
  4. Crumble goat cheese evenly over the flatbreads.
  5. Arrange peach slices and red onion slices on top.
  6. Season with salt and black pepper.
  7. Bake for 10 to 12 minutes until edges are brown and cheese is bubbling.
  8. Let rest for 2 minutes, then top with arugula, honey, and balsamic glaze.
  9. Slice into wedges and serve immediately.

Notes

Ensure peaches are ripe but firm to avoid sogginess. Use a mandoline for thin onion slices. Add arugula just before serving to keep it crisp.
