Ingredients
  

  • 1 pound pizza dough
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup fresh mint leaves, roughly chopped
  • 2 large lemons, zested and juiced
  • 4 garlic cloves, minced
  • 1/4 cup olive oil, extra virgin preferred
  • 8 ounces mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1/2 teaspoon red pepper flakes, optional
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven now.
  2. Pat the shrimp completely dry with paper towels.
  3. Toss the shrimp with half the minced garlic, half the lemon juice, 2 tablespoons olive oil, salt, and pepper. Let this marinate while you prepare everything else.
  4. Roll out your pizza dough on a floured surface to your desired thickness.
  5. Mix the remaining olive oil with the remaining garlic and lemon zest. Brush this mixture evenly over the dough.
  6. Sprinkle the mozzarella cheese evenly across the pizza.
  7. Arrange the marinated shrimp across the pizza.
  8. Scatter half the chopped mint over the top. Sprinkle with Parmesan cheese and red pepper flakes if using.
  9. Bake for 12-15 minutes until the crust turns golden brown and the shrimp cook through.
  10. Remove from the oven and immediately squeeze the remaining lemon juice over the hot pizza. Top with the remaining fresh mint.

Notes

The quality of your shrimp makes a noticeable difference. Use fresh or high-quality frozen shrimp. Fresh mint is essential for the best flavor.
