- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven now.
- Pat the shrimp completely dry with paper towels.
- Toss the shrimp with half the minced garlic, half the lemon juice, 2 tablespoons olive oil, salt, and pepper. Let this marinate while you prepare everything else.
- Roll out your pizza dough on a floured surface to your desired thickness.
- Mix the remaining olive oil with the remaining garlic and lemon zest. Brush this mixture evenly over the dough.
- Sprinkle the mozzarella cheese evenly across the pizza.
- Arrange the marinated shrimp across the pizza.
- Scatter half the chopped mint over the top. Sprinkle with Parmesan cheese and red pepper flakes if using.
- Bake for 12-15 minutes until the crust turns golden brown and the shrimp cook through.
- Remove from the oven and immediately squeeze the remaining lemon juice over the hot pizza. Top with the remaining fresh mint.
Notes
The quality of your shrimp makes a noticeable difference. Use fresh or high-quality frozen shrimp. Fresh mint is essential for the best flavor.
