Melon Mint Soup

Ingredients
  

  • 6 cups ripe cantaloupe, cubed
  • 1/4 cup fresh mint leaves
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1/2 cup cold water
  • 1/4 teaspoon pinch of salt
  • 1/4 cup Greek yogurt (optional)

Method
 

  1. Cut your cantaloupe in half and scoop out the seeds. Then, cut away the rind and chop the flesh into chunks.
  2. Place the cantaloupe chunks into your blender. Add the fresh mint leaves, lime juice, honey, cold water, and salt. If using Greek yogurt, add it now as well.
  3. Blend on high speed until completely smooth, about sixty seconds.
  4. Taste and adjust the seasoning. Add more lime juice or honey as desired.
  5. Transfer the soup to a covered container and refrigerate for at least two hours.
  6. Before serving, give the soup a quick stir and pour into chilled bowls. Garnish as desired.

Notes

Chill serving bowls beforehand for best results. Use fresh mint for optimal flavor.
