Ingredients
  

  • 4 cups romaine lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 1 large cucumber, diced
  • 1 medium red bell pepper, sliced thi
  • ½ medium red onion, thinly sliced
  • ½ cup fresh cilantro, chopped
  • ¾ cup plain yogurt
  • 2 tablespoons tomato paste
  • 2 teaspoons garam masala
  • 1 teaspoon ground cumi
  • 1 teaspoon ground coriander
  • ½ teaspoon turmeric powder
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Method
 

  1. In a medium bowl, combine the yogurt, tomato paste, garam masala, cumin, coriander, and turmeric to prepare the masala sauce.
  2. Add the minced garlic and grated ginger to the yogurt mixture and stir until blended.
  3. Whisk in the lemon juice and olive oil until the sauce is creamy and unified.
  4. Season the sauce with salt and black pepper to taste.
  5. In a large serving bowl, combine the chopped romaine, cherry tomatoes, cucumber, bell pepper, and red onion.
  6. Pour the masala sauce over the vegetables and toss gently to coat.
  7. Add the fresh cilantro and give everything one final toss.
  8. Serve immediately or refrigerate for 15 minutes for a chilled salad.

Notes

Make the masala sauce ahead for better flavor. Store components separately for meal prep convenience.
