- Preheat your oven to its highest setting, usually between 475°F and 500°F (245°C to 260°C).
- Prepare the 'white sauce' by combining ricotta cheese, minced garlic, one tablespoon of olive oil, and the zest of one lemon in a medium bowl.
- Stretch your dough into a 12-inch circle and place it on parchment paper or a floured pizza peel.
- Brush the outer edges of the dough with a lemon-olive oil mixture.
- Spread the ricotta mixture evenly over the dough, leaving about an inch of space around the edges.
- Sprinkle shredded mozzarella and grated Parmesan over the ricotta, then add another sprinkle of lemon zest.
- Slide the pizza into the hot oven and bake for 10 to 12 minutes until the cheese bubbles and the crust is golden brown.
- Let it sit for two minutes before topping with fresh basil and red pepper flakes, then slice and serve.
