Ingredients
  

  • 1 lb (450g) Pizza Dough
  • 1 cup Whole Milk Ricotta
  • 2 medium Fresh Lemons
  • 1.5 cups Fresh Mozzarella
  • 3 cloves Garlic cloves
  • 3 tablespoons Extra Virgin Olive Oil
  • 1/4 cup Parmesan Cheese
  • 1/2 cup Fresh Basil
  • 1/2 teaspoon Red Pepper Flakes
  • Salt and Pepper to taste

Method
 

  1. Preheat your oven to its highest setting, usually between 475°F and 500°F (245°C to 260°C).
  2. Prepare the 'white sauce' by combining ricotta cheese, minced garlic, one tablespoon of olive oil, and the zest of one lemon in a medium bowl.
  3. Stretch your dough into a 12-inch circle and place it on parchment paper or a floured pizza peel.
  4. Brush the outer edges of the dough with a lemon-olive oil mixture.
  5. Spread the ricotta mixture evenly over the dough, leaving about an inch of space around the edges.
  6. Sprinkle shredded mozzarella and grated Parmesan over the ricotta, then add another sprinkle of lemon zest.
  7. Slide the pizza into the hot oven and bake for 10 to 12 minutes until the cheese bubbles and the crust is golden brown.
  8. Let it sit for two minutes before topping with fresh basil and red pepper flakes, then slice and serve.

Notes

Use fresh ingredients for the best flavor. If ricotta is watery, strain it before use. Experiment with toppings like spinach or prosciutto for variety.
