Method
- Prepare the kale by removing tough stems and chopping leaves into bite-sized pieces.
- Slice the shallots thinly and fry them in olive oil until golden brown and crispy.
- Core and slice the apples into thin matchsticks or small dice.
- Whisk together the dressing ingredients and pour over the kale and apples, massaging the dressing into the kale.
- Add toasted pecans if using, and top with crispy shallots just before serving.
Notes
Ensure to dry kale thoroughly after washing. Watch shallots carefully while frying to prevent burning. Store crispy shallots separately until serving.
