Method
- Prepare your tomatoes by washing them gently and drying them with a soft towel.
- Use a serrated knife to cut the heirloom tomatoes into thick, irregular wedges or slices.
- Prepare your mozzarella by slicing it into rounds or tearing it by hand.
- If using a base like arugula or quinoa, place that at the bottom of your serving dishes first.
- Layer the tomato slices and mozzarella pieces into the bowl, tucking fresh basil leaves between the layers.
- Sprinkle sea salt and freshly cracked black pepper generously over the bowl.
- Drizzle the extra virgin olive oil slowly across the bowl.
- Finish with a decorative drizzle of balsamic glaze and serve immediately.
