Ingredients
  

  • 1 lb (450g) Pizza Dough
  • 1 cup Crushed Tomatoes (San Marzano preferred, seasoned with salt)
  • 8 oz Fresh Mozzarella (sliced or torn into small pieces)
  • 1/2 cup Fresh Basil Leaves (whole leaves, added after grilling)
  • 3 tbsp Extra Virgin Olive Oil (for brushing the dough and finishing)
  • 1 clove Garlic (minced, optional, for the sauce)
  • Kosher Salt (to taste)
  • Cornmeal or Flour (as needed, to prevent sticking on the prep surface)

Method
 

  1. Preheat your grill to high heat, aiming for a temperature between 450°F and 500°F.
  2. Prepare your dough by dividing it into two equal portions and stretching or rolling each piece into a 10-inch circle.
  3. Brush one side of the dough with olive oil and place it on the grill, oiled side down. Cook for about 2 minutes until the top bubbles and the bottom shows dark grill marks.
  4. Brush the top side with olive oil, flip the dough, and immediately spread a thin layer of tomato sauce over the grilled side.
  5. Distribute the fresh mozzarella pieces evenly across the surface and close the grill lid. Cook for another 3 to 5 minutes until the cheese melts and the crust is golden.
  6. Remove the pizza from the grill, let it rest for a minute, then scatter fresh basil leaves over the top and drizzle with olive oil. Slice and serve immediately.

Notes

Ensure your grill grates are clean and well-oiled to prevent sticking. Use a two-zone fire if using charcoal to control the cooking temperature.
