Ingredients
  

  • 250g Halloumi Cheese (sliced)
  • 4 cups Mixed Greens or Arugula
  • 1 cup Cherry Tomatoes (halved)
  • 1 medium Cucumber (sliced)
  • 1/4 cup Red Onion (thinly sliced)
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon Fresh Lemon Juice
  • 1 teaspoon Honey or Maple Syrup
  • Dried Oregano, Salt, and Pepper to taste

Method
 

  1. Prepare the grill or grill pan to medium-high heat.
  2. Pat the halloumi dry with a paper towel and slice it into pieces about half an inch thick.
  3. Brush each side of the halloumi with olive oil.
  4. Place the halloumi slices on the grill and cook for 2-3 minutes on each side until golden brown.
  5. In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
  6. In a small jar, whisk together olive oil, lemon juice, honey, and seasonings for the dressing.
  7. Remove the grilled halloumi from the heat and toss the vegetables with the dressing.
  8. Arrange the dressed vegetables on a platter and place the warm halloumi on top.
  9. Serve immediately.

Notes

Serve the salad fresh for the best texture. Store components separately if not serving immediately.
