Method
- Prepare the grill or grill pan to medium-high heat.
- Pat the halloumi dry with a paper towel and slice it into pieces about half an inch thick.
- Brush each side of the halloumi with olive oil.
- Place the halloumi slices on the grill and cook for 2-3 minutes on each side until golden brown.
- In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.
- In a small jar, whisk together olive oil, lemon juice, honey, and seasonings for the dressing.
- Remove the grilled halloumi from the heat and toss the vegetables with the dressing.
- Arrange the dressed vegetables on a platter and place the warm halloumi on top.
- Serve immediately.
Notes
Serve the salad fresh for the best texture. Store components separately if not serving immediately.
