Ingredients
  

  • 2 lbs Fresh Asparagus
  • 4 tbsp Extra Virgin Olive Oil
  • 2 tbsp Fresh Lemon Juice
  • 1 tsp Dijon Mustard
  • 1/2 cup Feta Cheese
  • 1/4 cup Toasted Walnuts
  • 1/4 cup Red Onion, sliced thinly
  • Kosher Salt, to taste
  • 1/2 tsp Black Pepper
  • 1 tsp Honey or Maple Syrup

Method
 

  1. Prepare the grill by preheating it to medium-high heat.
  2. Wash the asparagus and snap off the woody ends.
  3. Drizzle 2 tablespoons of olive oil over the asparagus and season with salt and pepper.
  4. Toss the asparagus to coat evenly and place it on the grill perpendicular to the grates.
  5. Grill for 3 to 5 minutes until charred and tender-crisp.
  6. In a small bowl, whisk together the remaining olive oil, lemon juice, Dijon mustard, and honey to make the vinaigrette.
  7. Remove the asparagus from the grill and place it in a serving bowl.
  8. Pour the vinaigrette over the warm asparagus and toss gently.
  9. Add the sliced red onions, crumbled feta cheese, and toasted walnuts, then toss again.
  10. Serve immediately, garnished with fresh parsley or mint if desired.

Notes

Watch the asparagus closely while grilling to avoid overcooking. Use fresh lemon juice for the best flavor.
