Ingredients
  

  • 1 pound pizza dough (store-bought or homemade)
  • 1 pound fresh asparagus, trimmed
  • 3 tablespoons olive oil
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)

Method
 

  1. Preheat your grill to medium-high heat, around 450°F. Let pizza dough rest at room temperature for 15 minutes.
  2. Toss asparagus with 1 tablespoon olive oil, salt, and pepper. Grill for 5-7 minutes until tender and slightly charred. Cut into 2-inch pieces.
  3. Roll out pizza dough on a floured surface to desired thickness. Brush one side with olive oil.
  4. Place dough oil-side down on the grill. Cook for 2-3 minutes until the bottom shows grill marks.
  5. Flip the crust carefully and brush the grilled side with remaining olive oil mixed with minced garlic.
  6. Add mozzarella cheese evenly, then distribute grilled asparagus pieces. Sprinkle Parmesan cheese and lemon zest.
  7. Close the grill lid and cook for another 3-5 minutes until cheese melts and bottom crisps up.
  8. Remove from grill, let rest for 2 minutes before slicing. Add red pepper flakes if desired. Serve hot.

Notes

Always oil your grill grates well to prevent sticking. Keep all toppings nearby before grilling. Par-baking the crust prevents soggy pizza.
