  • 1 package (3.4 oz) instant lemon pudding mix
  • 1 can (20 oz) crushed pineapple (undrained)
  • 2 cups mini marshmallows
  • 1 container (8 oz) frozen whipped topping (thawed)
  • 1 can (11 oz) mandarin oranges (drained)
  • 1 cup cottage cheese (small curd)

Method
 

  1. Grab a large mixing bowl. Add the instant lemon pudding mix directly to the bowl.
  2. Open your can of crushed pineapple. Pour the entire contents, including all the juice, over the pudding mix. Stir gently but thoroughly.
  3. Add the cottage cheese to your mixture and fold it in gently.
  4. Drain your mandarin oranges completely and pat them gently with paper towels. Add them to the bowl, folding carefully.
  5. Add the mini marshmallows and fold them in with a gentle touch.
  6. Finally, add your thawed whipped topping and fold it in slowly.
  7. Transfer your salad to a serving bowl. Cover it with plastic wrap and refrigerate for at least two hours.
  8. Before serving, give it a gentle stir.
