Method
- Grab a large mixing bowl. Add the instant lemon pudding mix directly to the bowl.
- Open your can of crushed pineapple. Pour the entire contents, including all the juice, over the pudding mix. Stir gently but thoroughly.
- Add the cottage cheese to your mixture and fold it in gently.
- Drain your mandarin oranges completely and pat them gently with paper towels. Add them to the bowl, folding carefully.
- Add the mini marshmallows and fold them in with a gentle touch.
- Finally, add your thawed whipped topping and fold it in slowly.
- Transfer your salad to a serving bowl. Cover it with plastic wrap and refrigerate for at least two hours.
- Before serving, give it a gentle stir.

This salad is best made the night before for optimal flavor. Keep it cold until serving time.
