Method
- Prepare the Corn: Shuck the ears of corn and remove silk. Leave raw for crunch or blanch in boiling water for 2-3 minutes, then plunge into ice bath.
- Cut the Kernels: Hold an ear of corn vertically in a bowl and slice the kernels off the cob.
- Prepare the Aromatics: Finely dice the red onion and soak in cold water if too sharp. Chiffonade the basil leaves.
- Mix the Base: Combine corn kernels and diced onions in a large bowl.
- Create the Dressing: Whisk together olive oil, lime juice, salt, pepper, and honey in a small jar or bowl.
- Combine: Pour dressing over corn and onion mixture, tossing thoroughly.
- Add the Basil: Gently fold in the basil leaves.
- Chill and Serve: Let sit for at least 15 minutes before serving.
Notes
Use the freshest corn possible. Add basil last to prevent browning. Can be made a day in advance without basil.
