Ingredients
  

  • 6-8 ears Fresh Sweet Corn, shucked and cleaned
  • 1 cup Fresh Basil Leaves, packed and chiffonade
  • 1/2 medium Red Onion, finely diced
  • 3 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Fresh Lime Juice
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper, freshly cracked
  • 1 teaspoon Honey or Agave (optional)

Method
 

  1. Prepare the Corn: Shuck the ears of corn and remove silk. Leave raw for crunch or blanch in boiling water for 2-3 minutes, then plunge into ice bath.
  2. Cut the Kernels: Hold an ear of corn vertically in a bowl and slice the kernels off the cob.
  3. Prepare the Aromatics: Finely dice the red onion and soak in cold water if too sharp. Chiffonade the basil leaves.
  4. Mix the Base: Combine corn kernels and diced onions in a large bowl.
  5. Create the Dressing: Whisk together olive oil, lime juice, salt, pepper, and honey in a small jar or bowl.
  6. Combine: Pour dressing over corn and onion mixture, tossing thoroughly.
  7. Add the Basil: Gently fold in the basil leaves.
  8. Chill and Serve: Let sit for at least 15 minutes before serving.

Notes

Use the freshest corn possible. Add basil last to prevent browning. Can be made a day in advance without basil.
