Ingredients
  

  • 3 lbs Yellow Onions, thinly sliced
  • 4 Tablespoons Unsalted Butter
  • 1 Tablespoon Olive Oil
  • 6 Cups Beef Stock
  • 1/2 Cup Dry Sherry or White Wine
  • 3-4 Sprigs Fresh Thyme
  • 1 Large Bay Leaf
  • 1 Small Baguette, cut into 1-inch thick slices
  • 1.5 Cups Gruyere Cheese, grated
  • Salt and Black Pepper, to taste

Method
 

  1. Slice and prepare the onions by peeling and cutting them into thin half-moons.
  2. Melt butter and olive oil in a pot, add onions, cover for 10 minutes, then caramelize for 45-60 minutes.
  3. Deglaze the pot with sherry or wine, scraping up caramelized bits.
  4. Add beef stock, thyme, and bay leaf; simmer uncovered for 30 minutes.
  5. Toast baguette slices in the oven at 400°F until crisp.
  6. Ladle soup into bowls, top with toasted bread and cheese, then broil until cheese is bubbly.

Notes

Use a heavy pot for even cooking. Grate your own cheese for best melting. Store leftovers without bread and cheese.
