  • 1 lb (450g) Pizza Dough
  • 8-10 large Fresh Figs, sliced into rounds or quarters
  • 4 oz (115g) Gorgonzola Cheese, crumbled (Dolce or Piccante)
  • 1 cup Mozzarella Cheese, freshly shredded
  • 2 tbsp Extra Virgin Olive Oil
  • 2 tbsp Balsamic Glaze
  • 1 cup Fresh Arugula
  • 1/4 cup Walnuts, toasted and chopped
  • 1 tbsp Honey (optional)
  • Salt and Black Pepper to taste

Method
 

  1. Preheat the oven to 500°F (260°C) for at least 30 minutes.
  2. On a lightly floured surface, stretch the pizza dough into a 12-inch circle.
  3. Brush the dough lightly with extra virgin olive oil and sprinkle with salt and black pepper.
  4. Spread the shredded mozzarella evenly over the dough, leaving a small border for the crust.
  5. Crumble the gorgonzola over the mozzarella.
  6. Arrange the sliced figs across the cheese, pressing them slightly into the cheese.
  7. Transfer the pizza to the hot stone or baking sheet and bake for 8 to 12 minutes.
  8. Remove the pizza from the oven and top with fresh arugula, toasted walnuts, and a drizzle of balsamic glaze.
  9. Let the pizza rest for 2 minutes before slicing and serving.

Notes

Use room temperature dough for easier stretching. Avoid overloading with wet ingredients to keep the crust crispy. Toast walnuts for enhanced flavor.
