  • 4 cups low sodium chicken or vegetable broth
  • 2 stalks lemongrass, bruised and cut into 2-inch pieces
  • 1-inch knob of galangal or ginger, sliced into thin rounds
  • 4-5 fresh lime leaves, tor
  • 2 tablespoons Thai chili paste (Nam Prik Pao)
  • 2 tablespoons fish sauce
  • 3 tablespoons fresh lime juice
  • 1 cup mushrooms (straw or button), halved or sliced
  • 1 lb raw shrimp, peeled and deveined
  • 1/2 cup cherry tomatoes, optional
  • 1/4 cup fresh cilantro, for garnish

Method
 

  1. Prepare the aromatics: Bash the lemongrass stalks, cut into pieces, and slice the ginger or galangal.
  2. Boil the base: Pour broth into a large pot, add lemongrass, ginger, and lime leaves, and bring to a boil. Simmer for 5 minutes.
  3. Add the paste and seasoning: Stir in Thai chili paste and fish sauce, allowing the broth to turn vibrant red.
  4. Cook the vegetables: Add mushrooms and cherry tomatoes, simmer for 3 minutes.
  5. Cook the protein: Add shrimp and cook until pink and opaque, about 2 minutes.
  6. The final touch: Turn off heat, stir in lime juice, and adjust seasonings to taste.
  7. Serve: Ladle soup into bowls and garnish with cilantro and chili slices.

Notes

Use fresh lime juice for the best flavor. Do not eat the lemongrass or galangal slices. Adjust seasonings at the end for optimal taste.
