Ingredients
  

  • 2 cloves garlic
  • 1 tablespoon fresh ginger
  • 4 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 2 packs of ramen noodles (discard flavor packets)
  • 2 cups baby spinach or bok choy
  • 1/4 cup sliced scallions
  • 1 tablespoon sesame oil
  • 1 teaspoon sriracha (optional)
  • 2 soft-boiled eggs or sliced cooked chicke

Method
 

  1. Heat sesame oil in a large pot over medium heat. Add minced garlic and grated ginger, sauté for about one minute until fragrant.
  2. Pour in chicken or vegetable broth and soy sauce. Bring to a gentle boil, then reduce heat and simmer for 5-10 minutes.
  3. Cook ramen noodles in a separate pot according to package instructions, usually 2-3 minutes. Drain and set aside.
  4. Add baby spinach or bok choy to the simmering broth and wilt for about 30 seconds.
  5. Taste the broth and adjust seasoning if necessary. Divide cooked noodles into bowls, ladle hot broth and vegetables over noodles.
  6. Top with halved soft-boiled eggs, sliced scallions, and a drizzle of sesame oil. Serve immediately.

Notes

Store broth and noodles separately to maintain texture. Reheat broth and pour over noodles when ready to serve.
