Ingredients
  

  • 3 large ripe Hass avocados, pitted and peeled
  • 3 cups vegetable broth, chilled or room temperature
  • 3 tablespoons fresh lime juice
  • 1/2 cup Greek yogurt, full fat for creaminess
  • 1/2 cup fresh cilantro, leaves and tender stems
  • 2 stalks green onions, chopped roughly
  • 1 clove garlic, minced or smashed
  • 1/4 teaspoon ground cumin, optional for depth
  • Salt and pepper to taste

Method
 

  1. Slice the avocados in half, remove the pit, and scoop the flesh into your blender jar.
  2. Pour in the chilled vegetable broth and lime juice.
  3. Add the Greek yogurt, cilantro, green onions, garlic, cumin, and a generous pinch of salt.
  4. Secure the lid on your blender tightly and blend until completely smooth, about 60 to 90 seconds.
  5. Taste and adjust seasoning if necessary.
  6. Pour the soup into a large glass bowl, cover with plastic wrap, and refrigerate for at least two hours.
  7. Serve very cold, garnished with your favorite toppings.

Notes

Always use cold broth for quicker chilling. Do not skip the chilling time to allow flavors to meld. Use ripe avocados for the best texture. Garnish right before serving to maintain crunch.
