Method
- Prepare your pizza dough and let it sit at room temperature for at least 30 minutes.
- Place a large skillet over medium-low heat. Add the butter and one tablespoon of olive oil. Once melted, toss in the sliced onions.
- Stir the onions occasionally and cook for about 30 to 40 minutes until they turn a deep golden brown.
- Preheat your oven to 450°F (230°C). If using a pizza stone, place it inside the oven while it heats.
- Dust your workspace with flour and roll out the dough into a 12-inch circle or rectangle.
- Transfer the dough to a piece of parchment paper and brush the surface with the remaining tablespoon of olive oil.
- Spread the caramelized onions evenly over the dough, leaving a small border around the edges.
- Place the slices of brie cheese on top of the onions.
- Sprinkle the chopped rosemary, salt, and pepper over the cheese.
- Carefully slide the parchment paper onto your baking sheet or pizza stone and bake for 12 to 15 minutes.
- Remove from the oven and let it rest for two minutes before drizzling with balsamic glaze.
Notes
Use fresh ingredients for the best results. Consider removing the rind from the brie for a smoother melt. Store leftovers in an airtight container for up to three days.
