Ingredients
  

  • 1 package lemon gelatin (3 oz)
  • 1 cup boiling water
  • 1 can frozen lemonade concentrate (6 oz, thawed)
  • 1 can sweetened condensed milk (14 oz)
  • 1 cup crushed pineapple, drained
  • 1½ cups mini marshmallows
  • 2 cups whipped topping (Cool Whip or homemade)

Method
 

  1. Dissolve the lemon gelatin in one cup of boiling water, stirring until no crystals remain.
  2. Pour the dissolved gelatin into a blender, add the thawed lemonade concentrate and sweetened condensed milk, and blend on medium speed for about 30 seconds.
  3. Transfer the mixture to a large mixing bowl.
  4. Gently fold in the drained crushed pineapple and mini marshmallows.
  5. Carefully fold in the whipped topping using a rubber spatula.
  6. Pour the mixture into a 9x13 inch dish or a decorative mold and smooth the top.
  7. Refrigerate for at least 4 hours or overnight until fully set.

Notes

Ensure the lemonade concentrate is completely thawed before blending. Drain the pineapple thoroughly to avoid excess liquid. For a more elegant presentation, spray your mold with non-stick cooking spray.
