Ingredients
  

  • 3 large ripe avocados, halved and pitted
  • 1/3 cup fresh lime juice
  • 2 cups cold vegetable broth
  • 1/2 cup fresh cilantro leaves
  • 1 small jalapeño pepper, seeded
  • 1 medium garlic clove
  • 1/2 teaspoon ground cumi
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ice water

Method
 

  1. Scoop the avocado flesh into a blender and add fresh lime juice immediately.
  2. Pour in the cold vegetable broth and ice water.
  3. Add cilantro leaves, seeded jalapeño, garlic clove, cumin, salt, and black pepper.
  4. Blend on high speed for about sixty seconds until smooth and creamy.
  5. Taste and adjust seasonings as needed.
  6. Transfer to a covered container and refrigerate for at least one hour.
  7. Stir before serving and pour into chilled bowls.

Notes

For a creamier soup, add coconut milk or Greek yogurt. For a lighter version, thin with cold water or cucumber juice. Store in an airtight container for up to two days.
