Method
- Scoop the avocado flesh into a blender and add fresh lime juice immediately.
- Pour in the cold vegetable broth and ice water.
- Add cilantro leaves, seeded jalapeño, garlic clove, cumin, salt, and black pepper.
- Blend on high speed for about sixty seconds until smooth and creamy.
- Taste and adjust seasonings as needed.
- Transfer to a covered container and refrigerate for at least one hour.
- Stir before serving and pour into chilled bowls.
Notes
For a creamier soup, add coconut milk or Greek yogurt. For a lighter version, thin with cold water or cucumber juice. Store in an airtight container for up to two days.
